- 1 lb chicken breast, sliced
- 1 cup bell peppers, sliced
- 1 cup pineapple chunks
- 1 cup broccoli florets
- 2 tablespoons soy sauce
- 2 tablespoons ketchup
- 2 tablespoons vinegar
- 1 tablespoon brown sugar
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Combine soy sauce, ketchup, vinegar, brown sugar, and cornstarch in a small bowl and whisk until smooth. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken slices to the pan and cook until golden brown, about 5-7 minutes.
- Toss in the bell peppers, broccoli, and pineapple, stir-frying for about 3-4 minutes.
- Pour the sauce over the chicken and vegetables and stir until it thickens, about 1-2 minutes.
- Season with salt and pepper to taste.
- Serve over cooked rice.
