Description

A layered delight of strawberry and vanilla mousse over a soft sponge cake, perfect for spring gatherings.

Ingredients

Scale
  • 1 cup strawberries, hulled and sliced
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 2 cups vanilla mousse
  • 1 cup strawberry glaze
  • 1 sponge cake (homemade or store-bought)
  • 2 tablespoons gelatin (optional, for stabilization)

Instructions

  1. Prepare the sponge cake: If you’re making it from scratch, bake the sponge and let it cool completely before using it as the base.
  2. Whip the heavy cream: In a mixing bowl, combine the heavy cream, sugar, and vanilla extract. Beat until soft peaks form and the cream holds its shape.
  3. Fold in the vanilla mousse: Gently introduce the vanilla mousse into the whipped cream, folding it carefully until the mixture is smooth and light.
  4. Set the sponge cake in a springform pan: Place your cooled sponge cake at the bottom of the prepared springform pan.
  5. Spread the vanilla mousse mixture: Spoon the mousse mixture over the sponge cake, smoothing it out delicately with a spatula.
  6. Layer the strawberries: Evenly distribute the sliced strawberries atop the mousse, creating a visually appealing array.
  7. Pour the strawberry glaze: Drizzle the strawberry glaze over the strawberries, allowing it to cascade down into the layers beneath.
  8. Chill the cake: Place the entire creation in the refrigerator for at least 240 minutes, allowing it to set perfectly.
  9. Release and serve: Carefully release the sides of the springform pan and slice to reveal the beautiful layers.

Notes

This cake can be made ahead of time and stored in the fridge for up to 2 days.
