Ingredients

  • 1 cup sourdough starter
  • 1 cup warm water
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup strawberries, hulled and chopped
  • 1 tablespoon sugar (optional)
  • 1 tablespoon olive oil (optional)

Instructions

  1. Combine the sourdough starter with the warm water until well combined.
  2. Incorporate the flour and salt, stirring until a shaggy dough forms.
  3. Fold in the chopped strawberries using a bench scraper.
  4. First rise: Let the dough rest for about 30 minutes under a kitchen towel.
  5. Knead the dough for approximately 10 minutes until smooth and elastic.
  6. Second rise: Transfer the dough to a greased bowl, cover, and let it rise until doubled in size.
  7. Preheat the oven to 375°F (190°C) about 30 minutes before baking.
  8. Shape the loaf and let it rise again for about 30 minutes.
  9. Bake for 30-35 minutes until golden brown.
  10. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

For best flavor, use ripe strawberries. Can substitute with raspberries or blueberries.
