- 1 lb ground beef
- 1 lb ground pork
- 1 cup breadcrumbs
- 1/2 cup onion, finely chopped
- 1/2 cup milk
- 2 eggs
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup creamy mac and cheese
- 8 slices of bacon
- 1/2 cup maple BBQ sauce
- 1/4 cup shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the ground beef, ground pork, breadcrumbs, chopped onion, milk, eggs, garlic powder, salt, and black pepper in a large bowl.
- Shape the meat mixture into a large rectangle on a sheet of plastic wrap.
- Spread the prepared mac and cheese over the center of the meat mixture.
- Roll the meat mixture around the mac and cheese, sealing the edges as you go.
- Wrap the meatloaf with the bacon slices, overlapping them slightly.
- Place the meatloaf in a baking dish and brush it with maple BBQ sauce.
- Bake for 1 hour or until the internal temperature reaches 160°F (70°C).
- Let it rest for 10 minutes before slicing and serving.
Notes
You can make this meatloaf in advance and refrigerate it before baking. Customize with other fillings if desired.
