Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup milk
  • 2 eggs
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup creamy mac and cheese
  • 8 slices of bacon
  • 1/2 cup maple BBQ sauce
  • 1/4 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the ground beef, ground pork, breadcrumbs, chopped onion, milk, eggs, garlic powder, salt, and black pepper in a large bowl.
  3. Shape the meat mixture into a large rectangle on a sheet of plastic wrap.
  4. Spread the prepared mac and cheese over the center of the meat mixture.
  5. Roll the meat mixture around the mac and cheese, sealing the edges as you go.
  6. Wrap the meatloaf with the bacon slices, overlapping them slightly.
  7. Place the meatloaf in a baking dish and brush it with maple BBQ sauce.
  8. Bake for 1 hour or until the internal temperature reaches 160°F (70°C).
  9. Let it rest for 10 minutes before slicing and serving.

Notes

You can make this meatloaf in advance and refrigerate it before baking. Customize with other fillings if desired.
