Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for rolling)
  • 2 tablespoons ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, baking soda, and salt in a medium bowl; set aside.
  3. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs, one at a time, ensuring each one is well incorporated before adding the next.
  5. Stir in the vanilla extract.
  6. Gradually mix in the dry ingredients until just combined.
  7. Mix together the 1/4 cup sugar and ground cinnamon in a small bowl for rolling.
  8. Use a cookie scoop to portion out dough, roll each ball in the cinnamon sugar mixture, and place on the prepared baking sheet.
  9. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set but still soft.
  10. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
