Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the whole chicken and pat it dry.
- In a bowl, toss the baby potatoes with olive oil, salt, and pepper.
- Place the chicken on a large sheet pan, surrounding it with the seasoned potatoes.
- Roast in the oven for about 1 hour or until the chicken reaches an internal temperature of 165°F (75°C).
- Let it rest for 10 minutes before carving.
- Serve and enjoy with the roasted potatoes.
