- 2 oranges, juiced and zested
- 1 tbsp fresh ginger, grated
- 2 cups mixed vegetables (broccoli, bell peppers, carrots, etc.)
- 2 tbsp soy sauce (gluten-free if needed)
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp cornstarch (optional for thickening)
- Sesame seeds for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the cubed chicken, orange juice, orange zest, grated ginger, soy sauce, olive oil, salt, and pepper in a large bowl. Mix well to coat the chicken thoroughly.
- Place the marinated chicken and mixed vegetables on a sheet pan, arranged in a single layer for optimal cooking.
- Bake for 15-20 minutes or until the chicken is cooked through (165°F/74°C) and the veggies are tender, stirring midway for even cooking.
- If desired, mix cornstarch with a little water and stir it into the pan juices. Return to the oven for an additional 2-3 minutes.
- Serve hot, garnished with sesame seeds for added texture and appeal.
