Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the minced garlic and sauté for about 1-2 minutes until fragrant.
- Stir in the orzo pasta and lightly toast for about two minutes.
- Pour in the vegetable broth and bring to a gentle boil.
- Cover the pot and let it simmer for about 10 minutes, stirring halfway through.
- Remove from heat and fold in the fresh spinach and grated Parmesan.
- Season with salt and pepper to taste.
