Ingredients

  • 2 cups buttermilk
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 onions, quartered
  • 4 cloves garlic, smashed
  • Fresh herbs (like thyme or rosemary)

Instructions

  1. Whisk together the buttermilk, salt, pepper, garlic powder, onion powder, and paprika until combined.
  2. Submerge the whole chicken into the buttermilk mixture. Cover the bowl or seal the Ziploc bag, then marinate in the refrigerator for at least 240 minutes, preferably overnight.
  3. Preheat your oven to 425°F (220°C).
  4. Remove the chicken from the marinade and allow excess buttermilk to drip off.
  5. Place the chicken in a roasting pan, surrounding it with the quartered onions and smashed garlic.
  6. Roast in the preheated oven for about 60 minutes, checking that the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10-15 minutes before carving.
