- 2 cups buttermilk
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 2 onions, quartered
- 4 cloves garlic, smashed
- Fresh herbs (like thyme or rosemary)
Instructions
- Whisk together the buttermilk, salt, pepper, garlic powder, onion powder, and paprika until combined.
- Submerge the whole chicken into the buttermilk mixture. Cover the bowl or seal the Ziploc bag, then marinate in the refrigerator for at least 240 minutes, preferably overnight.
- Preheat your oven to 425°F (220°C).
- Remove the chicken from the marinade and allow excess buttermilk to drip off.
- Place the chicken in a roasting pan, surrounding it with the quartered onions and smashed garlic.
- Roast in the preheated oven for about 60 minutes, checking that the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.
Notes
Marinate the chicken the night before for maximum flavor and tenderness. Ensure the chicken skin is dried before roasting for extra crispiness.
