Ingredients

- 2 cups cooked pasta (rotini or penne)
- 1 cup cooked chicken, cubed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, diced
- 1/4 cup black olives, sliced
- 1/4 cup Italian dressing
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta by boiling water and seasoning it with salt. Cook according to package instructions. Drain and let it cool.
- Prep the ingredients: dice the cucumber, halve the cherry tomatoes, and chop the red onion and parsley.
- Combine the cooked pasta, cubed chicken, halved cherry tomatoes, diced cucumber, chopped red onion, and sliced black olives in a large mixing bowl.
- Dress the salad with Italian dressing, and sprinkle with salt and pepper. Toss gently until everything is evenly coated.
- Garnish with chopped parsley and serve cold or at room temperature.
Notes
Letting the salad sit for 30 minutes before serving enhances the flavor as the ingredients marinate. Keeps well in the fridge for up to 3 days.
