Ingredients

  • 1 cup brewed espresso, cooled
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 24 ladyfinger cookies
  • 2 tbsp cocoa powder

Instructions

  1. Begin by beating the heavy cream in a large bowl until soft peaks form.
  2. Blend the mascarpone cheese, sugar, and vanilla extract until velvety and smooth.
  3. Gently fold the whipped cream into the mascarpone mixture until completely combined.
  4. Quickly dip each ladyfinger into the cooled brewed espresso and layer them in a serving dish.
  5. Spread half of the mascarpone mixture over the first layer of ladyfingers.
  6. Repeat the process with the remaining ladyfingers and mascarpone mixture to create a second layer.
  7. Dust the top generously with cocoa powder.
  8. Cover the dish with plastic wrap and refrigerate for at least 240 minutes.
