Description

Delicious and wholesome blueberry muffins perfect for breakfast or a snack.


Ingredients

  • 1 cup fresh or frozen blueberries
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar (or a sugar substitute)
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin.
  2. Mix together the flour, sugar, salt, and baking powder in a large bowl.
  3. Whisk together the vegetable oil, milk, egg, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry mix and gently stir until just combined.
  5. Fold in the blueberries without bursting them.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool slightly before transferring to a wire rack.

Notes

For a quicker alternative, try air frying your muffins at 320°F (160°C) for 12-15 minutes.
