Ingredients

- 1 cup fresh or frozen blueberries
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar (or a sugar substitute)
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup vegetable oil
- 1 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and prepare your muffin tin.
- Mix together the flour, sugar, salt, and baking powder in a large bowl.
- Whisk together the vegetable oil, milk, egg, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry mix and gently stir until just combined.
- Fold in the blueberries without bursting them.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool slightly before transferring to a wire rack.
Notes
For a quicker alternative, try air frying your muffins at 320°F (160°C) for 12-15 minutes.
