Instructions
- Combine the finely chopped pecans, cookie crumbs, ½ cup of powdered sugar, corn syrup, and vanilla extract in a mixing bowl.
- Mix everything together using a wooden spoon or spatula until well combined.
- Roll small portions of the mixture into balls about 1 inch in diameter.
- Coat each ball in the remaining cup of powdered sugar until evenly coated.
- Arrange the balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
