Description

A delightful summer pasta salad featuring shrimp, colorful vegetables, and a creamy dressing that brings everyone together.


Ingredients

  • 8 oz elbow macaroni
  • 1 lb cooked shrimp, peeled and deveined
  • 1 cup celery, diced
  • 1 cup bell pepper, diced
  • 1/2 cup red onion, diced
  • 1 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water.
  2. Combine the cooled macaroni, shrimp, celery, bell pepper, and red onion in a large bowl.
  3. Mix together the mayonnaise, lemon juice, garlic powder, salt, and pepper until smooth.
  4. Pour the dressing over the pasta mixture and toss until well coated.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

Great for summer gatherings and can be prepared a day in advance. Hold off on adding crunchy ingredients until right before serving.
