- 8 oz elbow macaroni
- 1 lb cooked shrimp, peeled and deveined
- 1 cup celery, diced
- 1 cup bell pepper, diced
- 1/2 cup red onion, diced
- 1 cup mayonnaise
- 2 tbsp lemon juice
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water.
- Combine the cooled macaroni, shrimp, celery, bell pepper, and red onion in a large bowl.
- Mix together the mayonnaise, lemon juice, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the pasta mixture and toss until well coated.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
Great for summer gatherings and can be prepared a day in advance. Hold off on adding crunchy ingredients until right before serving.
