Instructions
- Combine the chicken broth or water, onion, garlic, carrots, celery, salt, and pepper in a large pot.
- Bring the mixture to a simmer over medium heat.
- Add the chicken breasts to the pot, ensuring they are submerged.
- Cover the pot and let it poach for 15-20 minutes, until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the pot and let it rest for a few minutes.
