- 1 pound ground beef
- 1 can (15 ounces) diced tomatoes
- 1 can (15 ounces) corn
- 1 cup sour cream
- 2 cups shredded cheese (cheddar or a blend)
- 1 package (30 ounces) frozen hash brown potatoes, thawed
- 1 onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the ground beef with the chopped onion in a large skillet over medium heat until browned, about 5-7 minutes.
- Stir in the diced tomatoes, corn, sour cream, garlic powder, paprika, salt, and pepper.
- Spread half of the thawed hash brown potatoes in a greased 9×13 inch baking dish.
- Pour the beef mixture over the potatoes and spread it out.
- Layer the remaining hash browns on top.
- Sprinkle the shredded cheese evenly over the top.
- Bake for 45-50 minutes or until bubbly and golden.
- Let cool for a few minutes before serving.
Notes
For make-ahead, prep the casserole a day in advance and refrigerate. Adjust cooking time if baking from chilled.
