Description

A comforting casserole featuring seasoned ground beef, vibrant diced tomatoes, sweet corn, and a crispy potato topping, perfect for family dinners or gatherings.


Ingredients

  • 1 pound ground beef
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) corn
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 package (30 ounces) frozen hash brown potatoes, thawed
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef with the chopped onion in a large skillet over medium heat until browned, about 5-7 minutes.
  3. Stir in the diced tomatoes, corn, sour cream, garlic powder, paprika, salt, and pepper.
  4. Spread half of the thawed hash brown potatoes in a greased 9×13 inch baking dish.
  5. Pour the beef mixture over the potatoes and spread it out.
  6. Layer the remaining hash browns on top.
  7. Sprinkle the shredded cheese evenly over the top.
  8. Bake for 45-50 minutes or until bubbly and golden.
  9. Let cool for a few minutes before serving.

Notes

For make-ahead, prep the casserole a day in advance and refrigerate. Adjust cooking time if baking from chilled.
