- 4 boneless, skinless chicken breasts
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- Oil for frying
Instructions
- Preheat the oven to 375°F (190°C).
- Blend the softened butter, garlic, parsley, dill, salt, and pepper in a mixing bowl.
- Pound each chicken breast between plastic wrap to 1/2 inch thickness.
- Scoop a tablespoon of the garlic herb butter mixture and place it in the center of each chicken breast; fold in sides and roll up tightly.
- Dredge the chicken rolls in flour, dip in beaten eggs, then roll in breadcrumbs.
- Heat oil in a skillet over medium heat; fry the rolls until golden brown, about 3-4 minutes per side.
- Transfer to a baking dish and bake for 15-20 minutes until cooked through.
- Serve hot, paired with a salad or side dish.
Notes
Ensure even thickness when pounding chicken for the best results. For extra flavors, feel free to add cheese or substitute herbs in the filling.
