Delicious chimichangas filled with tender chicken, melted cheese, and zesty spices, perfect for any occasion.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup refried beans
  • 1/4 cup diced onions
  • 1/2 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Oil for frying

Instructions

  1. Combine the shredded chicken, cheese, refried beans, diced onions, garlic powder, cumin, salt, and pepper in a large bowl. Mix until everything is well blended.
  2. Place a tortilla on a clean surface and spoon about one-quarter of the chicken mixture onto its center.
  3. Fold in the sides of the tortilla and roll it up tightly from the bottom to form a chimichanga.
  4. Repeat the process with the remaining tortillas and filling, then set aside.
  5. Heat enough oil in a skillet over medium heat until it shimmers.
  6. Carefully place the chimichangas seam-side down in the hot oil, frying for about 3-4 minutes per side until golden brown and crispy.
  7. Transfer the cooked chimichangas to a plate lined with paper towels to drain excess oil. Serve hot.

Notes

Make ahead by preparing the filling in advance and refrigerating it. For a healthier version, consider air frying the chimichangas.
