- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup refried beans
- 1/4 cup diced onions
- 1/2 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 large flour tortillas
- Oil for frying
Instructions
- Combine the shredded chicken, cheese, refried beans, diced onions, garlic powder, cumin, salt, and pepper in a large bowl. Mix until everything is well blended.
- Place a tortilla on a clean surface and spoon about one-quarter of the chicken mixture onto its center.
- Fold in the sides of the tortilla and roll it up tightly from the bottom to form a chimichanga.
- Repeat the process with the remaining tortillas and filling, then set aside.
- Heat enough oil in a skillet over medium heat until it shimmers.
- Carefully place the chimichangas seam-side down in the hot oil, frying for about 3-4 minutes per side until golden brown and crispy.
- Transfer the cooked chimichangas to a plate lined with paper towels to drain excess oil. Serve hot.
Notes
Make ahead by preparing the filling in advance and refrigerating it. For a healthier version, consider air frying the chimichangas.
