Description

Indulge in crispy chicken chimichangas filled with tender, juicy chicken and melted cheese, enveloped in a golden fried tortilla.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 8 large flour tortillas
  • Oil for frying
  • Sour cream and salsa for serving

Instructions

  1. Combine the shredded chicken, cheese, chili powder, cumin, garlic powder, onion powder, salt, and pepper in a large bowl.
  2. Heat about an inch of oil in a large skillet over medium heat to 350°F.
  3. Spoon about 1/3 cup of the chicken mixture onto the center of each flour tortilla. Fold the sides over the filling and roll up tightly.
  4. Carefully place the chimichangas seam-side down in the hot oil and fry until golden brown, about 3-4 minutes per side.
  5. Remove the chimichangas from the oil with a slotted spoon and let drain on paper towels.
  6. Serve warm with sour cream and salsa.

Notes

For extra flavor, sprinkle lime juice over the filling before rolling. Can be adapted for vegetarian diets by using beans or veggies.
