Indulge in crispy chicken chimichangas filled with tender, juicy chicken and melted cheese, enveloped in a golden fried tortilla.
Ingredients

- 2 cups cooked shredded chicken
- 1 cup shredded cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 8 large flour tortillas
- Oil for frying
- Sour cream and salsa for serving
Instructions
- Combine the shredded chicken, cheese, chili powder, cumin, garlic powder, onion powder, salt, and pepper in a large bowl.
- Heat about an inch of oil in a large skillet over medium heat to 350°F.
- Spoon about 1/3 cup of the chicken mixture onto the center of each flour tortilla. Fold the sides over the filling and roll up tightly.
- Carefully place the chimichangas seam-side down in the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the chimichangas from the oil with a slotted spoon and let drain on paper towels.
- Serve warm with sour cream and salsa.
Notes
For extra flavor, sprinkle lime juice over the filling before rolling. Can be adapted for vegetarian diets by using beans or veggies.
