A delightful blend of crispy chicken, creamy bang bang sauce, and fresh veggies served over a fluffy bed of rice.
Ingredients

- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup cooked rice (white or brown)
- 1 cup mixed fresh veggies (bell peppers, cucumbers, carrots)
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Green onions and sesame seeds for garnish
Instructions
- Whisk together the mayonnaise, sweet chili sauce, sriracha, soy sauce, garlic powder, salt, and pepper in a mixing bowl until smooth.
- Heat a non-stick skillet over medium heat and add a splash of oil.
- Add the chicken pieces to the skillet, making sure they have room to crisp up. Cook until golden brown and fully cooked through, about 5-6 minutes.
- Layer the cooked rice at the bottom of a serving bowl.
- Place the cooked chicken atop the rice.
- Add the mixed fresh veggies over the chicken.
- Drizzle the bang bang sauce over the chicken and vegetables.
- Garnish with chopped green onions and sesame seeds.
- Serve immediately and enjoy!
Notes
For best results, marinate chicken in soy sauce for 15-30 minutes. Customize veggies and adjust heat level to taste.
