Description

A delightful blend of crispy chicken, creamy bang bang sauce, and fresh veggies served over a fluffy bed of rice.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup cooked rice (white or brown)
  • 1 cup mixed fresh veggies (bell peppers, cucumbers, carrots)
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Instructions

  1. Whisk together the mayonnaise, sweet chili sauce, sriracha, soy sauce, garlic powder, salt, and pepper in a mixing bowl until smooth.
  2. Heat a non-stick skillet over medium heat and add a splash of oil.
  3. Add the chicken pieces to the skillet, making sure they have room to crisp up. Cook until golden brown and fully cooked through, about 5-6 minutes.
  4. Layer the cooked rice at the bottom of a serving bowl.
  5. Place the cooked chicken atop the rice.
  6. Add the mixed fresh veggies over the chicken.
  7. Drizzle the bang bang sauce over the chicken and vegetables.
  8. Garnish with chopped green onions and sesame seeds.
  9. Serve immediately and enjoy!

Notes

For best results, marinate chicken in soy sauce for 15-30 minutes. Customize veggies and adjust heat level to taste.
