- 4 salmon fillets
- 8 oz shrimp, peeled and deveined
- 1 cup cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1 clove garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Lemon wedges for serving
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the filling in a bowl by combining shrimp, cream cheese, Parmesan, parsley, garlic, salt, and pepper.
- Prepare the salmon by cutting a pocket in each fillet.
- Stuff the fillets with the shrimp mixture.
- Sear the stuffed fillets in a skillet with olive oil for 2-3 minutes on each side.
- Bake the salmon for 15-20 minutes until cooked through.
- Serve with a squeeze of fresh lemon juice.
