- 1 onion, chopped

- 1 tablespoon Cajun seasoning

- 2 tablespoons olive oil
- Green onions, for garnish
Instructions
- Heat a large skillet over medium heat and drizzle with olive oil.
- Add the chopped onion and minced garlic; sauté until softened and fragrant, about 3-4 minutes.
- Stir in the chicken pieces and Cajun seasoning; cook until golden brown, about 5-7 minutes.
- Add the rinsed rice, mixing well to coat the grains.
- Pour in the chicken broth and bring to a boil; reduce the heat, cover, and let simmer for approximately 20 minutes.
- Stir in the heavy cream and season with salt and pepper; let cook for another 5 minutes for extra creaminess.
- Serve hot, garnished with green onions.
Notes
For an extra kick, add red pepper flakes or diced jalapeños. This dish can be made vegetarian by using tofu instead of chicken and vegetable broth.
