Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan.
- Mix the dry ingredients in a large bowl: all-purpose flour, baking powder, baking soda, and salt.
- Cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
- Incorporate the eggs one at a time, followed by the lemon zest.
- Alternate adding the dry mixture and buttermilk, starting and ending with the flour.
- Add vanilla extract and stir until combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Cool the cake in the pan for 10 minutes, then transfer to a wire rack.
- Whisk together powdered sugar and lemon juice to make the glaze, then drizzle over the cooled cake.
