  • 2 tbsp curry powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent, about 3-4 minutes.
  3. Toss in the diced chicken, stirring occasionally until browned on all sides, around 5-7 minutes.
  4. Stir in the curry powder, cauliflower florets, and chickpeas, cooking for a few minutes to let the spices infuse.
  5. Pour in the coconut milk, stirring to combine, then bring to a gentle simmer. Cover and cook for about 10-15 minutes until the cauliflower is fork-tender.
  6. Add salt and pepper to taste.
  7. Garnish with fresh cilantro and serve.
