- 2 cups cauliflower florets
- 1 can chickpeas, drained and rinsed
- 1 lb chicken breast, diced
- 1 can coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pan over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent, about 3-4 minutes.
- Toss in the diced chicken, stirring occasionally until browned on all sides, around 5-7 minutes.
- Stir in the curry powder, cauliflower florets, and chickpeas, cooking for a few minutes to let the spices infuse.
- Pour in the coconut milk, stirring to combine, then bring to a gentle simmer. Cover and cook for about 10-15 minutes until the cauliflower is fork-tender.
- Add salt and pepper to taste.
- Garnish with fresh cilantro and serve.
