Ingredients

  • 2 cups orzo pasta
  • 1 pound cooked chicken, shredded or cubed
  • 2 cups shredded cheese (such as cheddar or mozzarella)
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup mixed vegetables (optional)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) to prepare for baking.
  2. Bring a large pot of water to a boil and cook the orzo according to the package instructions until al dente, about 8–10 minutes. Drain and set aside.
  3. Combine the cooked orzo, shredded chicken, cream of chicken soup, chicken broth, mixed vegetables (if using), garlic powder, onion powder, salt, and pepper in a large mixing bowl. Stir gently to coat.
  4. Transfer the mixture to a greased 9×13-inch baking dish, spreading it evenly.
  5. Top with shredded cheese.
  6. Bake for 25–30 minutes, or until the cheese bubbles and turns golden brown.
  7. Allow to cool for a few minutes before serving.
