Description

Delicious caramel cheesecake cookies with a creamy filling and a golden exterior.


Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  6. Beat the cream cheese and powdered sugar in another bowl until smooth.
  7. Scoop a tablespoon of cookie dough, flatten it, and place a teaspoon of the cream cheese mixture in the center.
  8. Wrap the cookie dough around the filling to form a ball.
  9. Place the cookies on a baking sheet lined with parchment paper.
  10. Bake for 10–12 minutes, or until golden brown.
  11. Let the cookies cool slightly before drizzling with caramel sauce.

Notes

Chill the cookie dough for 30 minutes before baking for enhanced flavors. Freezes well; bake directly from frozen.
