Description

Ingredients

  • 1 pint cherry tomatoes, halved
  • 8 oz fresh mozzarella balls, diced
  • 1 cup fresh basil, chopped
  • 1/4 cup balsamic vinaigrette
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Carefully add the cheese tortellini and cook according to the package instructions until al dente, usually about 3–5 minutes.
  2. Drain the tortellini in a colander and rinse under cool water.
  3. Combine the cooled tortellini with halved cherry tomatoes, diced mozzarella, and chopped basil in a mixing bowl.
  4. Drizzle with balsamic vinaigrette and olive oil; mix gently.
  5. Season with salt and pepper to taste.
  6. Toss the salad gently, ensuring all components are coated.
  7. Serve chilled or at room temperature.

Notes

This salad tastes even better if prepared a few hours in advance. Feel free to add arugula or grilled chicken for extra flavor.
