- 12 oz cheese tortellini
- 1 pint cherry tomatoes, halved
- 8 oz fresh mozzarella balls, diced
- 1 cup fresh basil, chopped
- 1/4 cup balsamic vinaigrette
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Carefully add the cheese tortellini and cook according to the package instructions until al dente, usually about 3–5 minutes.
- Drain the tortellini in a colander and rinse under cool water.
- Combine the cooled tortellini with halved cherry tomatoes, diced mozzarella, and chopped basil in a mixing bowl.
- Drizzle with balsamic vinaigrette and olive oil; mix gently.
- Season with salt and pepper to taste.
- Toss the salad gently, ensuring all components are coated.
- Serve chilled or at room temperature.
Notes
This salad tastes even better if prepared a few hours in advance. Feel free to add arugula or grilled chicken for extra flavor.
