- 1 whole chicken (3–4 pounds)
- 2 cups buttermilk
- 2 tablespoons salt
- 1 tablespoon pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 onion, quartered
- 1 head of garlic, halved
- Fresh herbs (optional)
Instructions
- Make the marinade: In a large bowl, combine buttermilk, salt, pepper, garlic powder, and onion powder. Stir until well mixed.
- Submerge the chicken: Place the whole chicken into the buttermilk mixture, ensuring it’s fully coated. Cover and refrigerate for at least 4 hours or overnight.
- Preheat the oven: Preheat your oven to 425°F (220°C).
- Prepare the chicken for roasting: Remove the chicken from the brine and pat it dry with paper towels. Allow it to sit at room temperature for about 30 minutes.
- Stuff and place in the pan: In the roasting pan, place the quartered onion and halved garlic, then set the chicken atop this bed.
- Roast: Place the pan in the preheated oven and roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
- Rest and carve: Let the chicken rest for 10-15 minutes before carving. Serve and enjoy.
Notes
Marinate the chicken overnight for optimal flavor. An air fryer can also be used at 360°F (182°C) for approximately 45-50 minutes.
