Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well blended.
- Gradually mix in the dry ingredients until just combined.
- Fold in the white chocolate chips and chopped pistachios.
- Scoop the dough onto parchment-lined baking sheets, leaving space between each scoop.
- Bake for 10-12 minutes until edges are set and centers are soft.
- Allow cookies to cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
You can refrigerate the dough for up to 48 hours before baking. For a twist, substitute white chocolate with dark or semi-sweet chocolate chips.
