Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and peppermint extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the white chocolate chips.
  8. Divide the batter evenly among the cupcake liners.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the cupcakes cool completely before frosting.
  11. For the frosting, whip the heavy cream until soft peaks form, then gradually add the powdered sugar and vanilla extract until well combined.
