Description

A vibrant wrap filled with marinated grilled chicken, creamy avocado, crunchy lettuce, and zesty salsa, ideal for summer picnics and casual dinners.


Ingredients

  • 2 boneless, skinless chicken thighs or breasts
  • 4 whole wheat or corn tortillas
  • 1 ripe avocado, sliced
  • 2 cups lettuce (romaine or butter)
  • 1 cup fresh salsa
  • 1/2 cup feta or queso fresco, crumbled
  • Juice of 1 lime
  • 1 tsp chili powder
  • 1/2 tsp salt

Instructions

  1. In a mixing bowl, combine lime juice, chili powder, and salt. Toss in the chicken to coat and marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat and grill the chicken for 6-7 minutes on each side until fully cooked (internal temperature of 165°F). Let rest before slicing.
  3. Lay a tortilla flat and layer with lettuce, chicken slices, avocado, salsa, and cheese.
  4. Fold in the sides of the tortilla and roll tightly from the bottom. Wet edges to seal if necessary.
  5. Cut the wrap in half and serve immediately, or wrap in foil for later.

Notes

For a deeper flavor, marinate chicken overnight. Use fresh ingredients for the best taste.
