A delicious and creamy casserole featuring layers of chicken, tortillas, and a rich sour cream sauce.
Ingredients

- 2 cups cooked chicken, shredded
- 1 can (10 oz) enchilada sauce
- 1 cup sour cream
- 1 cup shredded cheese (cheddar or Mexican blend)
- 8 corn tortillas
- 1 can (4 oz) diced green chilies
- 1/2 cup chopped onion
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the shredded chicken, enchilada sauce, sour cream, green chilies, onion, garlic powder, cumin, salt, and pepper.
- In a greased 9×13 inch baking dish, spread a thin layer of the chicken mixture on the bottom.
- Layer 4 corn tortillas over the chicken mixture.
- Spread half of the remaining chicken mixture over the tortillas.
- Sprinkle half of the cheese on top.
- Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add jalapeños to the chicken mixture.
- This casserole can be made ahead of time and refrigerated before baking.
- Serve with a side of guacamole or salsa for added flavor.
