Description

A delicious and creamy casserole featuring layers of chicken, tortillas, and a rich sour cream sauce.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (10 oz) enchilada sauce
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 corn tortillas
  • 1 can (4 oz) diced green chilies
  • 1/2 cup chopped onion
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the shredded chicken, enchilada sauce, sour cream, green chilies, onion, garlic powder, cumin, salt, and pepper.
  3. In a greased 9×13 inch baking dish, spread a thin layer of the chicken mixture on the bottom.
  4. Layer 4 corn tortillas over the chicken mixture.
  5. Spread half of the remaining chicken mixture over the tortillas.
  6. Sprinkle half of the cheese on top.
  7. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.

Notes

  • For a spicier version, add jalapeños to the chicken mixture.
  • This casserole can be made ahead of time and refrigerated before baking.
  • Serve with a side of guacamole or salsa for added flavor.
