Ingredients

  • ¼ teaspoon dried thyme
  • 1 teaspoon garlic powder
  • ½ cup vegetable oil (for frying)
  • ½ cup all-purpose flour
  • 23 drops Kitchen Bouquet (optional)
  • 1 teaspoon seasoned salt
  • 1 teaspoon low-sodium soy sauce (or substitute Worcestershire sauce)
  • 5 thick-cut bacon strips
  • ¼ teaspoon ground sage
  • ⅓ cup half and half (equal parts milk and cream)
  • 2.5 cups chicken broth (preferably low sodium)
  • ¾ teaspoon black pepper

Instructions

  1. Prepare the Dredging Mixture: In a large plate, combine ½ cup flour, breadcrumbs, seasoned salt, and black pepper.
  2. Cook the Bacon: Heat a large skillet over medium-low, adding the bacon strips until crisp.
  3. Prepare the Chicken: Slice each chicken breast horizontally and pound to ¾-inch thickness.
  4. Dredge the Chicken: Pat chicken fillets dry and coat them in the dredging mixture.
  5. Fry the Chicken: Heat reserved bacon drippings with vegetable oil and fry the chicken until golden brown, about 4-5 minutes per side.
  6. Make the Gravy: Discard excess oil, melt butter in the skillet, and whisk in 4 tablespoons of flour until smooth.
  7. Whisk in the Liquids: Gradually incorporate chicken broth and half and half, stirring to thicken.
  8. Combine and Simmer: Return the chicken and bacon to the skillet, let it simmer for 10-15 minutes.
  9. Garnish and Serve: Finish with parsley and serve alongside mashed potatoes.

Notes

For a lighter option, use turkey bacon. Feel free to substitute chicken thighs for richer flavor.
