Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sautéing until translucent, about 3-5 minutes.
- Add the diced potatoes and 4 cups of vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are fork-tender, around 15-20 minutes.
- Blend the soup until smooth using an immersion blender or countertop blender in batches.
- Stir in the smoked Gouda cheese and 1 cup of milk or cream until the cheese melts and the mixture is creamy.
- Season with salt and pepper to taste.
