Juicy steak bites seasoned with bold Cajun spices and seared in a hot skillet. A quick, flavorful one-pan meal ready in under 15 minutes, perfect for busy nights.
Ingredients
For the Cajun Spice Blend (or use 2-3 tbsp store-bought):

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon cayenne pepper (adjust to heat preference)

½ teaspoon freshly ground black pepper

½ teaspoon white pepper (optional, for authentic heat)

1 teaspoon kosher salt
For the Steak Bites:

1.5 lbs sirloin steak, ribeye, or flank steak, cut into 1-inch cubes

1 tablespoon Cajun spice blend (from above)

1 teaspoon kosher salt (if spice blend is salt-free)

1 tablespoon olive oil or avocado oil
For the Skillet & Finish:

2 tablespoons unsalted butter
-
3–4 cloves garlic, minced
-
2 tablespoons fresh parsley, chopped
-
1 tablespoon fresh lemon juice
-
2 tablespoons low-sodium beef broth or water (optional, for deglazing)

Optional Add-Ins: 1 sliced bell pepper and ½ sliced onion, added to the skillet after the first steak sear
Instructions
Step 1: Cut and Season the Steak
Pat the steak cubes completely dry with paper towels. This is the most critical step for achieving a proper sear. Place them in a medium bowl. Drizzle with olive oil and toss to coat. In a small bowl, mix the Cajun spice blend and salt (if needed). Sprinkle the spice mix over the steak cubes and toss vigorously until every piece is thoroughly and evenly coated. Let sit at room temperature for 10-15 minutes while you preheat the skillet.
Step 2: Preheat the Skillet
Place a large cast-iron skillet or heavy-bottomed stainless steel skillet over medium-high heat. Let it preheat for a full 3-5 minutes until it is VERY hot. You should see wisps of smoke. A properly preheated skillet is essential for the signature crust.
Step 3: Sear the First Batch
Add the first half of the steak bites to the hot skillet in a single layer, ensuring they are not touching. Do not move them for 2-3 minutes. Allow a deep, dark, crusty sear to form. Using tongs, flip each piece and sear the other side for 1-2 minutes. The goal is a crusty exterior while keeping the inside medium-rare. Transfer this first batch to a clean plate.
Step 4: Sear the Second Batch & Optional Veggies
Add the remaining steak bites to the skillet. Sear for 2-3 minutes per side. If using bell peppers and onions, remove the second batch of steak and add the veggies to the hot skillet. Sauté for 3-4 minutes until slightly softened and charred.
Step 5: Create the Pan Sauce
Reduce heat to medium. Add the butter to the skillet. Once melted, add the minced garlic and cook for 30 seconds until fragrant. If desired, pour in the beef broth or water to deglaze, scraping up all the incredible browned bits (fond) from the bottom of the pan with a wooden spoon. Let it simmer for 1 minute.
Step 6: Finish and Combine
Return all the steak bites (and any accumulated juices) to the skillet, tossing to coat in the garlic butter sauce. If you cooked veggies, add them back now. Cook for another 1-2 minutes just to reheat everything. Remove from heat.
Step 7: Garnish and Serve Immediately
Drizzle the fresh lemon juice over the top and toss with the chopped parsley. Taste and adjust seasoning with a pinch of salt if needed. Serve immediately, straight from the skillet for maximum effect
