- 2 pounds of baby potatoes
- 1/4 cup olive oil
- Juice of 2 lemons
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and cut the baby potatoes in half.
- In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Add the potatoes to the bowl and toss until they are well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Bake for 30-35 minutes, turning halfway through, until golden and crispy.
- Garnish with fresh parsley before serving.
Notes
- For extra crispiness, you can broil the potatoes for the last 2-3 minutes of cooking.
