  • 2 lbs large shrimp (peeled, deveined)
  • 20 oz refrigerated three cheese tortellini
  • 8 tbsp unsalted butter
  • 1/3 cup dry white wine
  • 6 oz seafood or chicken stock
  • 2 cups heavy cream
  • 5 oz fresh baby spinach
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Season the shrimp with all-purpose seasoning.
  2. Sear the shrimp in a large skillet with olive oil for 1-2 minutes each side until pink and opaque.
  3. Remove the shrimp and set aside.
  4. Create the garlic sauce by adding white wine to deglaze the skillet.
  5. Add butter and minced garlic, cooking until fragrant.
  6. Mix in flour, then gradually add stock, cream, and cream cheese, simmering for 5-7 minutes.
  7. Cook the tortellini according to package directions.
  8. Fold the baby spinach into the sauce until wilted, then stir in Parmesan cheese.
  9. Combine the cooked tortellini and shrimp with the sauce.

Notes
