Description

Ingredients

- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup jalapeño, finely chopped
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup milk
- 1 egg
- Oil for frying
Instructions
- Whisk together the flour, cornmeal, baking powder, salt, and pepper in a large mixing bowl.
- Mix together the milk and egg in another bowl until fully blended.
- Pour the milk mixture into the dry ingredients and stir until just combined.
- Fold in the corn kernels and jalapeños.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Use a slotted spoon to remove fritters and drain them on paper towels.
- Serve warm and enjoy!
Notes
For a healthier option, consider air frying or baking the fritters instead of deep frying. Customize by adding cheese or different peppers.
