Description

Ingredients

  • 1/2 cup jalapeño, finely chopped
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup milk
  • 1 egg
  • Oil for frying

Instructions

  1. Whisk together the flour, cornmeal, baking powder, salt, and pepper in a large mixing bowl.
  2. Mix together the milk and egg in another bowl until fully blended.
  3. Pour the milk mixture into the dry ingredients and stir until just combined.
  4. Fold in the corn kernels and jalapeños.
  5. Heat oil in a frying pan over medium heat.
  6. Drop spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
  7. Use a slotted spoon to remove fritters and drain them on paper towels.
  8. Serve warm and enjoy!
