  • 1 tsp. vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned whole-rolled oats
  • Pinch of salt
  • 1 cup raspberry preserves (seeded or seedless)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8-inch square pan with aluminum foil and spray with cooking spray.
  3. Melt the butter in a large microwave-safe bowl for about a minute.
  4. Whisk in granulated sugar, brown sugar, and vanilla extract until combined.
  5. Add flour, oats, and optional pinch of salt; stir until blended.
  6. Press the remaining mixture into the prepared pan, creating an even layer.
  7. Spread the raspberry preserves evenly over the crust.
  8. Sprinkle the reserved crumble topping over the raspberry layer.
  9. Bake for about 30 minutes or until lightly golden brown.
  10. Cool on a wire rack for at least 2 hours before slicing.

Notes

You can substitute unsalted butter with coconut oil for a dairy-free alternative. Feel free to mix in nuts or chocolate chips.
