- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 tsp. vanilla extract
- 1 cup all-purpose flour
- 3/4 cup old-fashioned whole-rolled oats
- Pinch of salt
- 1 cup raspberry preserves (seeded or seedless)
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8-inch square pan with aluminum foil and spray with cooking spray.
- Melt the butter in a large microwave-safe bowl for about a minute.
- Whisk in granulated sugar, brown sugar, and vanilla extract until combined.
- Add flour, oats, and optional pinch of salt; stir until blended.
- Press the remaining mixture into the prepared pan, creating an even layer.
- Spread the raspberry preserves evenly over the crust.
- Sprinkle the reserved crumble topping over the raspberry layer.
- Bake for about 30 minutes or until lightly golden brown.
- Cool on a wire rack for at least 2 hours before slicing.
Notes
You can substitute unsalted butter with coconut oil for a dairy-free alternative. Feel free to mix in nuts or chocolate chips.
