Instructions

  1. Heat the olive oil in a medium-sized skillet over medium heat.
  2. Cook the diced potatoes, seasoning with salt and pepper, for about 10-12 minutes until golden brown.
  3. Prepare the eggs by whisking together with milk, salt, and pepper in a mixing bowl.
  4. Melt the butter in a separate non-stick pan over medium heat, then pour in the egg mixture.
  5. Scramble the eggs gently until just set and slightly runny, then remove from heat.
  6. Warm the flour tortillas in the oven or microwave until pliable.
