Ingredients

- 1 cup pistachio nuts
- 2 cups heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 1/2 cup dark chocolate chips
- 1 tablespoon butter
Instructions
- Soak pistachio nuts in water for 4 hours, then drain and blend until smooth.
- In a bowl, whip heavy cream until soft peaks form.
- In another bowl, mix pistachio paste, sugar, and vanilla extract.
- Fold the whipped cream into the pistachio mixture gently.
- Pour the mousse into serving cups and refrigerate for at least 2 hours.
- For the ganache, heat milk and butter in a saucepan until simmering.
- Add dark chocolate chips and stir until melted and smooth.
- Let the ganache cool slightly before pouring over the chilled mousse.
- Chill again for 30 minutes before serving.

- Ensure the pistachios are unsalted for the best flavor.
- For a vegan version, substitute heavy cream with coconut cream and use dairy-free chocolate.
