Instructions
- Preheat your oven to 375°F (190°C).
- Mix the dry ingredients: whisk together the flour, baking soda, baking powder, and salt in a medium bowl.
- Cream the softened butter and white sugar in a large bowl until smooth and fluffy using an electric mixer.
- Add the egg and extracts, beating until combined.
- Combine the wet and dry ingredients gradually, being careful not to overmix.
- Bake rounded tablespoons of dough on ungreased baking sheets for 8-10 minutes until edges are lightly golden.
- Cool on a wire rack for 5 minutes before transferring.
- Prepare the filling by beating together the softened butter, powdered sugar, cream, and vanilla extract until creamy; add food coloring to desired shades.
- Assemble the sandwiches by spreading the filling on one cookie and topping with another.
Notes
For best texture, use room temperature butter and avoid overmixing. Cookies can be stored in an airtight container for up to 5 days.
