  • 4 cups green cabbage (thinly sliced)
  • 1/2 cup green onions (chopped, divided)
  • 6 cups chicken broth (low sodium if preferred)
  • 1 tablespoon rice vinegar
  • Salt and pepper (to taste)
  • 2 beaten eggs
  • Red pepper flakes or sriracha (optional)

Instructions

  1. Brown the ground pork in a heavy-bottomed pot with sesame oil over medium heat.
  2. Add minced garlic and grated ginger, cooking until fragrant.
  3. Build the soup base by adding chicken broth, soy sauce, rice vinegar, salt, and pepper; bring to a simmer.
  4. Stir in diced onion, shredded carrots, and thinly sliced cabbage; cover and cook for 5-7 minutes.
