- 6 tablespoons butter, melted
- 2 eggs, at room temperature
- 3/4 cup nonfat Greek yogurt
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour

- 3/4 cup sugar
- 1 teaspoon salt
- 2/3 cup Nutella
Instructions
- Preheat your oven to 350ºF (175ºC) and prepare muffin cups by spraying them with cooking spray.
- In a large bowl, combine the mashed bananas with the melted butter until well mixed.
- Add the eggs, Greek yogurt, and vanilla extract; mix until smooth and creamy.
- In another bowl, whisk together the flour, baking soda, salt, and sugar.
- Gently fold the dry ingredients into the banana mixture until just combined.
- Pour the batter evenly into the prepared muffin cups.
- In a small bowl, melt the Nutella for about 20 seconds in the microwave until pourable.
- Drizzle the melted Nutella over the batter and swirl it with a knife to create patterns.
- Bake for 15-20 minutes for regular muffins or 20-25 minutes for giant muffins. Check for doneness with a knife.
- Let the muffins cool in the pans for 15 minutes before transferring them to a wire rack.
Notes
Use overly ripe bananas for the best sweetness and moisture. Consider adding nuts or chocolate chips for variation.
