Ingredients

  • 3 extremely ripe bananas, mashed
  • 6 tablespoons butter, melted
  • 2 eggs, at room temperature
  • 3/4 cup nonfat Greek yogurt
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 cup sugar
  • 1 teaspoon salt
  • 2/3 cup Nutella

Instructions

  1. Preheat your oven to 350ºF (175ºC) and prepare muffin cups by spraying them with cooking spray.
  2. In a large bowl, combine the mashed bananas with the melted butter until well mixed.
  3. Add the eggs, Greek yogurt, and vanilla extract; mix until smooth and creamy.
  4. In another bowl, whisk together the flour, baking soda, salt, and sugar.
  5. Gently fold the dry ingredients into the banana mixture until just combined.
  6. Pour the batter evenly into the prepared muffin cups.
  7. In a small bowl, melt the Nutella for about 20 seconds in the microwave until pourable.
  8. Drizzle the melted Nutella over the batter and swirl it with a knife to create patterns.
  9. Bake for 15-20 minutes for regular muffins or 20-25 minutes for giant muffins. Check for doneness with a knife.
  10. Let the muffins cool in the pans for 15 minutes before transferring them to a wire rack.

Notes

Use overly ripe bananas for the best sweetness and moisture. Consider adding nuts or chocolate chips for variation.
