- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup ground almonds
- 1/4 teaspoon salt
- 1/2 cup Nutella
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and powdered sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, ground almonds, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
- Chill the dough in the refrigerator for 30 minutes.
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Use a heart-shaped cookie cutter to cut out cookies, and cut out the center of half of them to create a window.
- Place the cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes or until lightly golden.
- Let the cookies cool completely before spreading Nutella on the solid cookies and topping them with the cut-out cookies.
- Dust with powdered sugar before serving.
Notes
- For a nut-free version, you can omit the ground almonds.
- Store cookies in an airtight container for up to a week.
