Description

- 2 cups Fresh baby spinach
- 1 cup Feta cheese, crumbled
- 1 cup Mozzarella cheese, shredded
- 1 Red onion, chopped
- 4 Tortillas
- 2 tablespoons Olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Heat your skillet: Place a non-stick skillet over medium heat and drizzle in a little olive oil.
- Sauté the red onion: Add the chopped red onion to the skillet and cook until softened, about 3–4 minutes.
- Add the spinach: Toss in the fresh spinach and stir until it’s wilted, about 2 minutes.
- Mix in the cheeses: Remove from heat and sprinkle in the crumbled feta and shredded mozzarella, stirring until melted.
- Assemble the quesadilla: Place a tortilla in the skillet, add the filling, and fold over.
- Cook to perfection: Sauté for 3–4 minutes on each side until golden brown and the cheese is melted.
- Slice and serve: Cool slightly, then slice into wedges and serve warm.
Notes
Make the filling ahead of time for quick assembly. Customize with additional ingredients like olives or sun-dried tomatoes.
