Description

Delight in creamy, cheesy Mediterranean Quesadillas filled with fresh spinach, feta, and mozzarella, all enveloped in crispy tortillas.


Ingredients

  • 2 cups Fresh baby spinach
  • 1 cup Feta cheese, crumbled
  • 1 cup Mozzarella cheese, shredded
  • 1 Red onion, chopped
  • 4 Tortillas
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat your skillet: Place a non-stick skillet over medium heat and drizzle in a little olive oil.
  2. Sauté the red onion: Add the chopped red onion to the skillet and cook until softened, about 3–4 minutes.
  3. Add the spinach: Toss in the fresh spinach and stir until it’s wilted, about 2 minutes.
  4. Mix in the cheeses: Remove from heat and sprinkle in the crumbled feta and shredded mozzarella, stirring until melted.
  5. Assemble the quesadilla: Place a tortilla in the skillet, add the filling, and fold over.
  6. Cook to perfection: Sauté for 3–4 minutes on each side until golden brown and the cheese is melted.
  7. Slice and serve: Cool slightly, then slice into wedges and serve warm.

Notes

Make the filling ahead of time for quick assembly. Customize with additional ingredients like olives or sun-dried tomatoes.
