Description

A delightful one pot pasta dish featuring marinated chicken, fresh vegetables, and creamy feta, inspired by Mediterranean flavors.


Ingredients

  • 8 oz Angel Hair Pasta
  • 1 lb Juicy Marinated Chicken
  • 1 cup Cherry Tomatoes, halved
  • 2 cups Fresh Spinach
  • 1/2 cup Olives, pitted
  • 1/4 cup Lemon Juice
  • 4 cloves Garlic, minced
  • 1/2 cup Feta Cheese, crumbled
  • 2 tbsp Olive Oil

Instructions

  1. Heat a splash of olive oil in a large pot over medium heat. Add the marinated chicken and cook until browned on all sides, about 5-7 minutes.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in cherry tomatoes, olives, and spinach. Cook until the spinach wilts.
  4. Add angel hair pasta and enough water to cover by about an inch. Bring to a boil.
  5. Reduce heat to a simmer and cook uncovered, stirring occasionally, until pasta is tender, about 5-7 minutes.
  6. Stir in lemon juice and crumbled feta just before serving.

Notes

For deeper flavor, marinate chicken overnight. Customize vegetables based on what’s available.
