- 8 oz Angel Hair Pasta
- 1 lb Juicy Marinated Chicken
- 1 cup Cherry Tomatoes, halved
- 2 cups Fresh Spinach
- 1/2 cup Olives, pitted
- 1/4 cup Lemon Juice
- 4 cloves Garlic, minced
- 1/2 cup Feta Cheese, crumbled
- 2 tbsp Olive Oil
Instructions
- Heat a splash of olive oil in a large pot over medium heat. Add the marinated chicken and cook until browned on all sides, about 5-7 minutes.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Stir in cherry tomatoes, olives, and spinach. Cook until the spinach wilts.
- Add angel hair pasta and enough water to cover by about an inch. Bring to a boil.
- Reduce heat to a simmer and cook uncovered, stirring occasionally, until pasta is tender, about 5-7 minutes.
- Stir in lemon juice and crumbled feta just before serving.
Notes
For deeper flavor, marinate chicken overnight. Customize vegetables based on what’s available.
