Step 1: Infuse the Spices (Toasting Method)

Step 3: Strain the Concentrate
After steeping, strain the cold brew concentrate through a fine-mesh sieve lined with a coffee filter or a nut milk bag. This may take some time, but be patient to ensure a grit-free result. You will be left with a beautifully spiced, smooth cold brew concentrate.
Step 4: Prepare the Spiced Maple Cream
While the coffee is straining, make the spiced maple cream. In a chilled bowl, combine the heavy cream, 1 tablespoon of maple syrup, vanilla extract, and a pinch of cinnamon. Using a whisk or a hand mixer, whip until soft peaks form. Be careful not to overwhip. Cover and refrigerate until ready to use.
Step 5: Assemble the Float
Place 1-2 generous scoops of vanilla bean ice cream into a tall glass or a sturdy mug. For the best experience, chill the glass beforehand.
Step 6: Pour and Integrate
Slowly pour the spiced maple cold brew concentrate over the ice cream. You will hear a satisfying sizzle as the cold brew meets the frozen ice cream. Pour enough to nearly fill the glass. The ice cream will immediately begin to melt, creating a creamy, frothy head.
Step 7: Add the Finishing Touches
Top the float with a generous dollop of the spiced maple whipped cream. For a final touch of elegance, garnish with a cinnamon stick for stirring, a light grating of fresh nutmeg, or a drizzle of extra maple syrup.
Step 8: Serve Immediately with a Spoon and Straw
