Ingredients

  • 2 tablespoons Dijon mustard
  • 2 sweet potatoes, peeled and cubed
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the glaze by whisking together maple syrup and Dijon mustard in a mixing bowl.
