- 8 ounces strawberries, hulled
- 3/4 cup unsalted butter, softened (for frosting)
- 3–4 cups powdered sugar
- 1/4 teaspoon salt (for frosting)
- 1 tablespoon heavy cream, optional
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Whisk together the flour, baking soda, baking powder, and salt in a mixing bowl.
- Cream the softened butter and granulated sugar together for about 3 minutes until light and fluffy.
- Mix in the lemon zest, vanilla extract, and lemon extract, then add the egg.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Drop tablespoon-sized balls of dough onto the prepared baking sheets.
- Bake for 10-12 minutes until the edges are lightly golden.
- Beat the softened butter for the frosting until light and fluffy.
- Add powdered sugar gradually and incorporate mashed strawberries for flavor.
- Spread strawberry frosting on the bottom of one cookie and top with another to form a sandwich.
Notes
For maximum freshness, use ripe strawberries. Cookies can be made ahead and stored in an airtight container.
